Baked Tofu Veggie Spring Rolls
Spring rolls are a fun and easy way to eat all your veggies and not have to suffer through another boring salad. What’s really great about spring rolls is that you can add or subtract any ingredients that suit your personal preference – you can truly appease your table’s resident picky eater without having to make a special dish just for them! Most grocery stores should carry hoisin sauce, rice paper wrappers, and vermicelli noodles – just check the Asian section of the store. Personally, I had a little trouble finding the noodles at Safeway, so I went to a local Asian market and found MANY varieties (of which I didn’t even get the right ones, but they still did the trick…improvisation is a key ingredient to every meal!).
Since we have a vegetarian in our household (my beloved fiancé!) I cook only vegetarian friendly meals – but you can easily add pork or chicken to these if tofu isn’t your style. I would suggest that you give this tofu a chance – because as a recent tofu convert myself, I was surprised at how delicious this simple recipe was.
I have included the links to the recipes I used below. A word of advice in terms of timing this meal would be to prepare in the following order:
- Prepare/bake tofu
- Boil noodles
- Prep vegetables while noodles and tofu are cooking
- Whip up the peanut sauce
- Assemble rolls at the table (everyone making their own)
What’s really fun about these is everyone gets a chance to make their own rolls and laugh together while little mistakes are made along the way – roll the perfect spring roll takes practice, but truly is not that difficult! I will link to a great article below that describes the process, but wall we did wasput a big bowl of warm water on the table, dipped the paper, loaded them with ingredients, and rolled em up!

Ingredients and recipes:
- 8 ounces extra firm tofu – drained and sliced
- 1.5 tbsp sriracha
- 2 tbsp soy sauce
- 1 tsp olive oil
- Pickled vegetables (carrots and daikon used here)
- Sliced pineapple
- Vermicelli noodles (may need to go to a specialty market for)
- Rice paper wrappers (can be found in most grocery stores)
- Chopped lettuce
- Chopped herbs (mint, cilantro, thai basil)
- Chopped jalapenos (if you want them spicy!)
- 3/4 cup natural-style creamy peanut butter
- 1/4 cup plus 2 tablespoons water
- 3 tablespoons hoisin sauce
- 2 tablespoons freshly squeezed lime juice (from about 1 1/2 medium limes)
- 4 1/2 teaspoons soy sauce
- 1 tablespoon granulated sugar
- 2 1/4 teaspoons chile-garlic paste
- 1 medium garlic clove, mashed to a paste
- 1/2 teaspoon toasted sesame oil
